Recipes That Taste Good & Are Good For You!
Tasty and easy are what we look for in healthy recipes! Here are a couple recipes that taste good and are good for you! Plus, you can use these recipes for your meal prep or to add to other dishes for a yummy meal.
breakfast tacos
Ingredients:
2 tbsp oil
1 cup of your favorites veggies of choice (peppers, broccoli, onion, etc)
2 eggs or egg alternative (we love Just Egg)
2 corn tortillas
1/4 cup monterey jack cheese or dairy free cheese
Optional Toppings:
Avocado
Pico De Gallo or salsa
Your favorite hot sauce
Directions:
To start, take a skillet and turn heat to medium high. When skillet is hot, add 1 tablespoon of oil and place corn tortillas in skillet until they are slightly toasted on each side. Move tortillas to serving plate. Next, add another tablespoon of oil to the skillet and start sautéing your veggies, once they get semi soft add your eggs. You can cook the eggs however you like. We recommend scrambled for this recipe! When eggs are done you can start assembling your tacos! Add eggs, cheese, and desired toppings to tortillas for a tasty and quick breakfast!

crockpot buffalo chicken
This chicken is great topped on a baked sweet potato, in a veggie packed salad, or enjoyed on sliders!
Ingredients:
2 lbs chicken breast
1 cup franks red hot
3 tbsp butter or dairy free butter
3 tbsp coconut aminos or soy sauce
1 1/2 tsp garlic powder
1/2 tsp cayenne
1/2 packet ranch seasoning or dairy free alternative
Directions:
Set slow cooker to low. Add all ingredients into it, EXCEPT the chicken, mix until well combined. Add chicken (can be frozen) to slow cooker. Cook for 4-6 hours on low or until chicken in tender. Remove chicken from slow cooker and shred. Return shredded chicken to slow cooker and stir into sauce. Turn slow cooker to warm until ready to eat!

Greek gyro
This recipe is also great for meal prepping into gyro “bowls” by putting ingredients over cooked basmati rice! Yum!
Ingredients:
Falafel (Trader Joes has the best)
Pita Bread
Lettuce
Tomato
Cucumber
Feta or dairy free Feta
Purple Onion
Hummus or Tzatziki
Homemade Tzatziki:
1/2 cup plain greek yogurt or cashew milk yogurt
1 cup sour cream or dairy free sour cream
1/2 cucumber, grated (seeds removed)
2-3 cloves garlic, grated
1 tbsp lemon juice
2 tbsp olive oil
1 tbsp dill, chopped (can use dried)
1 tsp onion powder
Salt & pepper to taste
Directions:
For the home made tzatziki sauce - start by cutting the cucumber in half and scraping out the seeds. Grate and then squeeze out the water from the cucumber using a kitchen towel or paper towels. Mince garlic cloves. Juice half a lemon. Combine all ingredients together and let sit in the fridge. The longer it sits in the fridge, the more flavorful it will get!
Cook your falafel in the air fryer or oven according to package directions. Cut your tomato, cucumber, and purple onion into slices. Shred your lettuce. Take your pita and either microwave for ten seconds or place into a skillet to get warm. If you don’t warm your peta bread before assembling your “taco” it may break in half! Once your falafel is cooked and your pita bread is warm, you can start assembling your gyro! Put a layer of tzatziki or hummus on your pita and layer in the other ingredients to your liking!

In a shaker bottle add one scoop of ice, a couple cucumber slices, mint leaves, & two ounces of simple syrup. Shake vigorously! We are trying to break up the mint leaves and cucumber! Once shaken, pour into a glass and top with club soda!
