3 Summer Salads To Fuel Your Mind And Body!
Raspberry Lime Chicken Salad
This salad is packed with - good for you - ingredients that contain vital nutrients to keep you energized and healthy! Raspberries and limes both contain Vitamin C, which is essential in repairing tissues in the body and supporting immune system functioning. Green leaf lettuce is high in Vitamin A which can assist in the health of your eyes, skin, teeth, and more! Chicken is great because it is a lean protein and contains Vitamin B12, which is known to help promote energy levels!
Ingredients:
1/4 cup fresh raspberries, 2 limes, 1 head of green leafy lettuce, 1/4 cup radishes, 1/4 cup sunflower seeds, 1-2 chicken breasts, 1/2 cup shredded fontina cheese (or cheese of choice), 1 tbsp + 1/4 cup olive oil, 1/2 tsp honey, 1/2 tsp sage, 1/4 tsp pepper, a pinch or two of salt. *Organic ingredients are a great choice!
Directions:
Heat 1 tbsp of olive oil in a pan. Lightly season the chicken breast with a pinch of sage, salt, and pepper. Once the oil is hot, lightly brown the chicken breast on both sides (approximately 2-4 minutes per side). Remove chicken from heat, sprinkle with a pinch more of salt, and let it rest on a cutting board for a few minutes. Thinly slice the chicken into long strips and add them back to the heated pan. Sauté the chicken until fully cooked and set aside. Rinse all the produce & lightly dry the raspberries. Chop the green leafy lettuce into 1-2 inch pieces and place in a large bowl. Slice the radishes into thin slices and place on top of the lettuce. Zest the lime until you have about 1 tbsp of zest. Quarter the lime and squeeze the juice from each wedge into a small bowl. Combine the lime zest, lime juice, remaining olive oil, honey, remaining sage, pepper, and salt to create the dressing. Whisk the dressing for 1 minute. Top the salad with sliced chicken, sunflower seeds, raspberries, and shredded fontina cheese (or cheese of choice). Drizzle with dressing and enjoy!
Kale Avocado Salad
Kale is an extremely good source of vitamins like, Vitamin K which is essential for the blood system. Kale also contains significant amounts of Vitamin A, C, and Calcium which is good for our bones! Additionally, it is known to be diabetic-friendly due to the low amounts of calories and carbs it contains!
Ingredients:
2 avocados, 1 lemon, 1-2 handfuls of cherry tomatoes, 1 large bunch of kale, 1/8 cup chopped walnuts, 1/2 cup finely shredded parmesan (or cheese of choice), 1/4 cup olive oil, 2 tbsp balsamic vinegar, 1/4 tsp pepper, a pinch of salt.
Directions:
Rinse all the produce. Halve the avocado and dice into 1/2 inch pieces, slice the cherry tomatoes in half, and chop the kale into 1 inch pieces. Combine the avocado, tomatoes, and kale in a large bowl. Zest the lemon and set in a small bowl. Quarter the lemon and squeeze the juice over the salad combination. Whisk together lemon zest, olive oil, balsamic vinegar, pepper, and salt. Toss the salad with dressing, walnuts, and parmesan (or cheese of choice). Yum!!
Juicy Citrus Salmon Salad
We love this salad because it’s simple, delicious, and both dairy and gluten free! It contains vitamins such as Vitamin E and A which are found in Macadamia Nuts, and tons of Vitamin C which is found in Grapefruit! This salad also includes a good source of Omega Fatty Acids from Salmon which are important for maintaining a healthy body!
Ingredients:
1 grapefruit, 1/8 cup sliced pickled red onions, 1/4 cup crushed or slivered macadamia nuts, 2 heads of romaine lettuce, 1-2 filets of salmon, 1tsp + 1/4 cup olive oil, 2 tbsp white wine vinegar, 1 pinch + 1 tsp Italian seasonings, 1/4 tsp pepper, a pinch of salt
Directions:
Rub the 1 tsp of olive oil on the flesh side of the salmon and sprinkle with a pinch of Italian seasonings. Broil salmon for approximately 2-3 minutes on each side or until fully cooked to your liking, set aside. Rinse all produce. Chop the romaine lettuce into 1-2 inch pieces and place in a large bowl. Peel the grapefruit and dice into 1/2 inch cubes. Whisk together remaining olive oil, white wine vinegar, remaining Italian seasonings, pepper, and salt. Top the lettuce with grapefruit, pickled red onions, macadamia nuts, and salmon. Drizzle the dressing over everything and serve! Delicious!
