Jodie

I love a fun little decadent treat to sweeten your day and boost your mood! It’s simple to make and you can serve immediately smoothie style, or I love it frozen, if you can wait for it to freeze!

VEGAN CHERRY CHOCOLATE COCONUT DELIGHT

INGREDIENTS:

2 cups organic frozen cherries, 1 cup organic coconut milk, 2 tablespoons organic raw cacao powder, 1 small medjool date (pitted and chopped).

OPTIONAL ADD-INS:

1/2 teaspoon almond extract or vanilla, large handful of spinach (always looking for ways to add in those greens!), 1 scoop plain or vanilla plant based protein powder, 2 tablespoons nut butter.

OPTIONAL TOPPINGS:

Organic shredded coconut, chopped nuts, granola, cacao shavings or nibs, hemp hearts, mint leaves. 

 DIRECTIONS:

Add all of the ingredients to a high powered blender, blend until smooth, add a little extra liquid to adjust the consistency to your liking. Serve smoothie style or freeze in a glass container and serve with a spoon and optional toppings. Enjoy!


Morgan

Most mornings I make myself a Homemade Spiced Latte using my little espresso maker. However, if you don’t have an espresso maker you can use a small stovetop pot to heat and froth your milk! Here is a recipe for my homemade spiced latte!

HOMEMADE SPICED LATTE

INGREDIENTS:

1/2 cup hot AC Coffee, 1/2 cup your choice of milk (I love oat milk!), 1-2 teaspoons brown sugar, 1-2 drops of vanilla extract, a dash of cinnamon, a dash of cardamom, a dash of nutmeg.

DIRECTIONS:

In a small stovetop pot heat the 1/2 cup of milk on a low setting until it is warm to the touch. Use a whisk to froth the milk for 1-2 minutes until a generous amount of small bubbles form. Add the coffee, brown sugar, and vanilla to the milk and heat for an additional 30 seconds while whisking. Pour the liquid into your favorite mug and top with the cinnamon, cardamom, and nutmeg. Voila! You have the perfect spiced latte!

My favorite breakfast is Avocado Toast with Egg! I also love this for a mid-day or a pre-run snack… providing I have enough time before the run.

Why do I love this? It helps to fuel my morning with protein, carbs, and good fats while also being fresh and not heavy. I start with a lightly toasted piece of Ezekiel bread, not buttered. Next comes half of a fresh avocado. Growing up in California where avocados were plentiful, I prefer a fresh avocado, I use half for my toast and save the other for another day or on my salad that day. Since I am usually on the run... I fry two egg whites. If I have it in the house, I add thinly sliced radishes and some microgreens to top off my Avocado Toast. I add a sprinkle of Penzey's California Seasoned Pepper and I am good to go!

My favorite snack would have to be some good Honey Roasted Mixed Nuts! I'm kind of a big fan of all nuts. Boring I know, but it's definitely my quick go to!

I love slicing an apple and sprinkling cinnamon on top. Cinnamon has so many benefits like helping with lowering blood sugar levels, helping with inflammation, and helping with metabolism... just to name a few! I also love eating these apples with a handful of mixed nuts. I love eating this as a snack and before or after a workout!!

The recipe I’d like to share is actually used as a skincare remedy that is part of my daily ritual. In the winter I get dry because of the weather and in the summer I get red because of the sunshine. I use 100% pure cold pressed Moringa Oil which feels amazing on my skin. It has also been found to relieve stress!

My favorite snack is Popcorn popped in a pot with a table spoon of Coconut Oil and some Himalayan Pink Salt. Once it’s popped, I sprinkle more salt and garlic powder to taste. Shake it up. It’s delicious just like that or with other toppers like melted grass fed butter or ghee. I sometimes throw in regular or peanut M&Ms for my salty-sweet cravings!
